Minced beef pie with garlic potatoes.


Ingredients

1kg lean minced beef
1 onion, chopped
3 carrots, sliced
4 tomatoes, peeled and chopped
1 ¼ cups of beef stock
1 teaspoon cornflour
1 tablespoon mixed herbs
2 tablespoons olive oil
2 garlic cloves, crushed
1 ¼ lb potatoes (3 large) pre cooked and sliced
salt and pepper


method
1.Pre – heat oven to 180c. Stir fry the meat and the onions in a large pan until browned.

2.Add the carrots and the tomatoes to the pan.

3.Stir in the stock, with the cornflour blended in, and the herbs, bring to the boil and simmer for 2-3 minutes, then season to taste. Transfer to a shallow oven proof dish.

4.Mix the oil, garlic and seasoning together. Layer the potatoes on top of the meat, brushing liberally with the garlic oil. Cook for 30-40 minutes until the potatoes are tender and golden.

  2. Whenever I make something with minced beef (hamburger, the Yanks call it), I always get enough, when it's cheap (on sale) in order to make the above dish or similar and Spaghetti Bolognese as well as Chilli Con Carne.

    The secret to many of these dishes coming out right and rich is tomato puree (Yanks call it paste - the thick one we get in little tiny cans or tubes).

    Here, thought is Auntie Kay's Pork Chops - A very cheap dish as pork is always cheapish.

    2-4 boneless pork chops
    1 Green Pepper
    4 sticks of celery
    2 Cans of bachelors (Campbell's) condensed tomato soup
    A squeeze of tomato puree
    Chicken stock

    Throw it all in a casserole dish with the veg chopped and no water except a bit to make about a quarter cup of chicken stock.
    Heat for 45 mins and serve with creamed (Mashed) potato.
